These are cupcakes are something that I wasn’t sure would work or not. It turns out they do and I think that they are perfect for really hot days or any summer day, with their clean and crisp flavour, you just cannot go wrong.

Recipe

Ingredients:
150g Dairy Free Butter, softened (I like to use lactofree butter)
150g Caster Sugar
2 Medium Free-Range Eggs, beaten
150g Gluten Free Self-Raising Flour (I like to use Doves Farm gluten free flour)
Zest of Two Limes

Equipment:
Scales
Grater/Zester
12 – Hole Cupcake or Muffin Tray
12 Cupcake Cases
Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Ice Cream Scoop (optional)
Tablespoon (optional)
Teaspoon (optional)
Cake Release Spray or Oil Spray (optional)
Cake Tester/Skewer/Toothpick/Teaspoon Handle
Cooling Rack


Method:

First things first, measure out and prepare all of your ingredients so that they are completely ready for you to use. Then preheat your oven to 180C/160C Fan/Gas 4, also line a 12-hole muffin tin with paper cases.

Grab your mixing bowl, wooden spoon/electric hand whisk, spatula and all of your cupcake ingredients.

Place all of your ingredients EXCEPT for the lime zest into your mixing bowl and mix until well combined smooth batter.

Once this is done, scrape around the sides of your mixing bowl with your spatula and add your lime zest to your mixture.

Mix one more time for good luck.

Grab your prepare cupcake/muffin tray, ice cream scoop or tablespoon and a teaspoon or whatever you are going to use to get your mixture into your cupcake cases and your spray oil.

Spread your mixture evenly between your cupcake cases. I personally like to spray my cupcake cases with some spray oil before adding the mixture so that less of the cupcake ends up sticking to the cupcake case after baking. So, I do mine by getting my mixture ready on my ice cream scoop/tablespoon and teaspoon, spray the case once or twice, and add the mixture as quickly as possible because the oil does distort the shape of the cupcake case. I then scrape around the sides mixing bowl so that I loose as little of the mixture to the washing up.

Once this is done, place your cupcakes into your preheated oven for 10 – 15 minutes. You can check if these are cooked using different ways, but I prefer inserting a teaspoon handle/cake tester/skewer and seeing if it comes out clean.

Once your cupcakes have finished baking, leave the cupcake tray to cool for 10 minutes on a cooling rack and then remove the cupcakes onto the cooling rack, leaving them to cool completely.
