Hearty Salad with Pomegranate Video

This Winter Salad is healthy and delicious. Unlike other salads, it can be made ahead of time so you can spend more time with your guests during your holiday dinner.
RECIPE:
Winter Salad
Makes 10 cups (2.5 L)
Salad:
4 cups (1 L) finely sliced green cabbage or a combo of red and green, your creative choice
2 cups (500 mL) chopped parsley, stems included
½ large red onion, finely sliced
2 Tbsp (30 mL) cold pressed canola oil or extra virgin olive oil
3 Tbsp (45 mL) apple cider vinegar
1 large pomegranate – see note
1 cup (250 mL) crumbled feta cheese, cow, goat or sheep’s milk, your choice
¼ cup + 2 Tbsp (90 mL) raw green pumpkin seeds
In a large bowl: toss together cabbage, parsley and red onion. Add oil and toss, add vinegar and toss.
Find a heavy wooden spoon or a meat mallet. Cut pomegranate in half. Working over the bowl of salad gently place your thumbs on the outside stem part of the pomegranate and press down and out.
Place your hand over the cut side of the pomegranate and using the heavy wooden spoon or a meat mallet gently start “Spank the pomegranate” a la Auntie Hack, its fun and therapeutic all at the same time.
What’s going to happen is those wee seeds are going to go flying onto the salad and hopefully not on you, your counter, your walls just the inside of the bowl. Repeat with the other half. Remove any white membrane that may have made it into the bowl. And voila! You should have all the seeds in the bowl.
Wipe hands, remove bowl from the sink, you can clean it up later.
Add feta cheese and pumpkin seeds and toss the salad together. Serve.

When picking a pomegranate look for weight not colour. The heavier the pomegranate the juicier it will be. Store a pomegranate for up to one month on the counter or up to two months in the fridge.
