Episode 7: Collard Greens and Cornbread Video

Making a Southern Classic and one of my favorite Vegetables growing up!! Serve with Oxtails, Rice and Gravy, Fried Chicken, just a meal by itself!!

Collard Greens

2 bunches Collard Greens, chopped and washed
1 smoked ham hock
1 tbsp onion powder
1 tbsp granulated (white) sugar
1 tbsp kosher salt
1 cap full (1 teaspoon) distilled white vinegar

You can use any kind of seasonings that you prefer- Cayenne Pepper, Hot Sauce, Garlic Powder, etc. Also you can use Smoked Turkey Wings or Smoked Turkey Necks. You can also use Mustard or Turnip Greens instead of Collard.

Note: If using Collards, remove stems and cut them.

In a large pot of boiling water, cook ham hock and add all the seasonings about 2-3 hours or until tender. Wash and pick greens (don't add anymore water). Drop half of the greens into the boiling water with ham hock and add all . Add the rest of the greens. Put the lid on them, turn down the heat to medium and cook for 2-3 hours or until tender.

Cornbread

1 cup self rising cornmeal mix
1 cup self rising flour
1/3 cup white sugar, optional
2 eggs
1/2 cup whole milk
1/2 cup buttermilk
1/2 stick (1/4 cup) unsalted butter, melted

You can use All purpose flour and Cornmeal but add baking powder and salt

Preheat oven to 400 degrees

In a large bowl, stir all the ingredients together until well blended. Pour mix into a 9 inch round pan or Iron Skillet greased with cooking spray or butter. Bake for 20-25 minutes or until golden brown. Serve piping hot or let it cool.
