Veg and schezwan frankie is a very popular popular street food. Roti of the veg frankie is made with all purpose flour(maida) mixed with whole wheat flour. The Patty or the filling is made with mashed potatoes combined with spices and frankie masala. It is rolled with green/schezwan chutney, chopped cabbage, onion and frankie masala.
To make the Frankie seasoning/masala:
[INGREDINETS]
- 2 Tsp raw mango powder/
- 1 Tsp red chilli powder
- ½ Tsp coriander (dhaniya) powder
- ½ Tsp roasted cumin (jeera) powder
- ½ Tsp black pepper (kali mirch)
- 1 Tsp garam masala
- ½ Tsp black salt
- ½ Tsp Salt
- 1 pinch turmeric powder
- 1 pinch asafoetida
To make the patty:
- 2 Tsp oil
- 1 Tsp Crushed green chilli
- 1 Tsp Crushed ginger
- 1 Tsp Crushed garlic
- 1 Chopped onion
- ½ Tsp red chilli powder
- 1 Pinch turmeric powder
- 4 Bolied potatoes
- 1 Tbsp Frankie masala
- Salt to taste
- Chopped coriander
To make the wrap:
- 1 & ½ Cup All purpose flour (maida)
- ¼ Cup whole wheat flour (aata)
- Salt to taste
- 2 Tsp oil
- Water to make dough
To assemble the frankie:
- Green Coriander/Schezwan chutney
- Chopped cabbage
- Frankie achar-(2+2 tsp vinegar & water,chopped onion,chopped green chhilli)
- Frankie masala
